Chocolate and Berries 3 Layers Cake Recipe


This Chocolate and Berries 3 Layers Cake Recipe is a lot of work but totally doable. It is a very rich chocolate cake perfect for a birthday, shower or any other celebration.

* you might need to do this cake recipe in 3 batches since this may not fit your Mixer bowl, if you do, just divide the recipe in 3 because this will make 3  cakes.


– 15 eggs

– 3 cups of all purpose flour

– 9 tablespoon of cocoa powder

– 1 1/2 cups of sugar

– 3 teaspoons of baking powder


Preheat oven to 350F.

Spray cooking spray on round baking pans and sprinkle flour on bottom and sides. I used a 10 inch round cake pan.

Sift flour, cocoa powder and baking powder together on a bowl and reserve.

Lets start separating the egg whites from the yolks. Once its separated add the egg whites on your KitchenAid Mixer bowl and Whisk it with the Wire Whisk attachment on, on high speed until high peaks, without ever turning off your mixer start adding the egg yolks and sugar until all combined. Turn off your mixer.

Lets start adding the flour mixture into the egg mix gently little by little ALWAYS FOLDING IT GENTLY (the reason why is because we want to keep those bubbles there) until all combined.

Pour the batter on the baking pan and with the help of a spoon even the batter on the top.

Bake it for about 15 minutes or less, you can stick a tooth pick to see if it comes clean, then its ready.

Take your cake off the pan and let it cool off on a wire rack.


– 1 package of strawberries

– 2 small packages of blackberries

– 1/4 cup of sugar

– 1 cup of orange juice

– 2 packages of semi sweet chocolate morsels

– 1 package of milk chocolate morsels

– 1 can of condensed milk

– 2 cans of table cream

This is optional for decoration of the cake:

– 1/2 cup of semi sweet chocolate morsels

– 1 tablespoon of table cream

– edible golden glitter


On a medium size bowl add condensed milk and table cream and mix it well. Reserve.

Chop off the strawberries and add blackberries and sprinkle sugar, mix it well and reserve.

We are going to melt  chocolate next, I do it on the microwave but if you prefer you can use the double boiler, Just make sure you do 1 package (1 layer) at a time.

Lets start with 1 package of semi sweet chocolate, melt it completely and add 1 cup of the condensed milk mixture and mix it well until all combined and reserve.

Do the same with the other 2 packages of chocolate morsels and reserve ( all separated).


On a cake stand or plate or whatever you prefer cut 4 pieces of wax paper and lay then making a square (see pics) and lay the 1st cake (if you need you can cut some of the top off to level the cake) and soak the cake with orange juice with the help of a brush, when I say soak it I mean it, soak it a lot, otherwise it will be too dry.

Now with the help of  a spatula its time for the 1st chocolate layer, the semi sweet, pour it over the middle of the cake and work it towards the edges, then drain the berries (half) and spread it over the chocolate.

Lay the other cake over it and smash a bit just to set the filling to the sides, soak the cake again with the orange juice, LOTS OF IT.

Pour the Milk chocolate filling now and the other half of the berries and lay the last cake over it, smash it again.

Soak the cake and now we will start pouring as little bit of the filling in the middle of the top of the cake and spreading over it, then starting from the bottom, we are going to cover the sides of the cake with this filling, you might need to fill a little the layers in between with this so it wont be gaps on the sides of your cake. Once you cover sides and top of your cake you can start decorating however you like.

On my case I melted the milk chocolate and added the tablecream and let it cool down completely in the fridge on a deco bag. Once cold I started making little swirls over the cake and on the bottom as well.

Then I made a big pile (bed) on the center and I layed 2 strawberries and a few Blackberries. With a brush I painted with the edible glitter the berries and the chocolate swirls and sprinkled the glitter over the cake.

Pull the wax paper out gently and your beautiful cake is ready.

After chocolate mix is ready its time to spread it over the cake
Make sure you drain the berries before

After doing the same with the other layer its time to top the cake and finish sides
