Red Velvet Cupcake with Mascarpone Frosting Recipe

This Red Velvet Cupcake with Mascarpone Frosting Recipe is so fluffy and moist, right on time for Valentine’s Day.

This recipe made 22 cupcakes.


– 1/2 cup of butter at room temperature (1 stick)

– 1 1/2 cups of sugar

– 2 eggs

– 1 cup of buttermilk

– 1 teaspoon of vanilla extract

– 2 tablespoons of red food coloring ( I didn’t have enough so I used only 1 tbsp)

– 1 1/2 teaspoons of baking soda

– 1 tablespoon of distilled white vinegar

– 2 cups of all purpose flour

– 1/3 of cup of unsweetened cocoa powder

– 1 teaspoon of salt


Preheat oven to 350F.

Set a cupcake baking sheet with liners.’

In your KitchenAid Mixer bowl add butter and sugar and with the paddle attachment on beat it until fluffy. Mix in the eggs (1 at a time), vanilla extract then add buttermilk (at this point you will notice your batter will look all crumbled, relax, its normal) and finally add the red food coloring and mix it well until combined, turn off the mixer.

Stir vinager and baking powder into the mix.

Sift flour, cocoa powder and salt and add to the batter, folding it gently until combined.

Pour the batter into the cupcake liner (about 3/4) and to the oven it goes for about 20 minutes, you can check if it is ready with a toothpick, ig it comes out clean, cupcakes are ready. Also make sure you bake the cupcakes 1 batch at a time.

Sit cupcakes over a clean kitchen towel until completely cold before you start frosting the cupcakes.

Now just let them cool down completely



– 1 cup of butter at room temperature ( 2 sticks)

– 8 oz of cream cheese at room temperature

– 8 oz of mascarpone cheese at room temperature

– 1 teaspoon of vanilla extract

– 2 cups of powdered sugar (you might need a little bit more)

–  pinch of salt

Vanilla bean is optional, you can cut a piece of the vanilla bean and open in the middle, scrape with a knife the inside and add to the frosting.


On your KitchenAid Mixer bowl add the butter and start mixing it on slow speed with the paddle attachment and add the cream cheese until combined.

Add salt and  vanilla extract and if you like the vanilla bean and start adding the powdered sugar 1/2 cup at a time. Whenever the frosting is all combined add the mascarpone cheese on slow speed just until mixed in ( if you over beat it it will crumble so my advice is to mix it by hand).

Your frosting is ready, now its time to frost cupcakes and decorate however you prefer.
