INGREDIENTS FOR CUPCAKE:
– 2 eggs at room temperature
– 1 stick of butter at room temperature (1/2 cup)
– 1/2 teaspoon on vanilla extract
– 1/2 cup of milk at room temperature
– 1 cup of sugar
– 1/2 teaspoon of salt
– 1 1/4 teaspoon of baking powder
– 1 1/2 cup of flour
– 12 tsp Nutella
Preheat your oven to 350F.
On your KitchenAid Mixer Bowl beat the butter until creamy with the flat beater attachment on. Add sugar and beat it until creamy and white, then start adding the eggs, one at a time beating well after each addition.
In another bowl sift flour, baking powder and salt together and whisk it well to combine all dry ingredients. Turn your Mixer to low speed and start alternating pouring flour mix and milk into your batter always starting with flour and ending with flour then add vanilla extract until well combined
Scoop 3/4 of each cupcake liner with the batter and add 1 teaspoon of nutella on the top of each cupcake. (if your Nutella is too hard you can microwave if for a few seconds to soften up a bit and make it easy to swirl)
To make the swirl design you Will need a toothpick or a wooden skewer, I gotta say this part is the most difficult because the batter is so hard that makes difficult to swirl the nutella into the cupcake, so what I did was, I held with my left hand the cupcake liner and with the right hand holding the skewer I started folding the batter from the bottom to the top covering the nutella then I started swirling the batter and it looked perfect.
After your done swirling it its baking time, I let it bake for about 20+ minutes, I checked it after 20 minutes and its a little tricky because the nutella is melted so your toothpick never comes completely clean, but whenever my cupcakes were golden I took them out.
* Please disregard the halloween cupcake liner, I was running out of the basic color, lol.
INGREDIENTS FOR THE NUTELLA BUTTERCREAM FROSTING:
– 1 stick (1/2 cup) of unsalted softened butter
– 4 cups confectioners sugar
– 1/4 cup whole milk
– 1/2 teaspoon vanilla extract
– 1/4 cup of softened Nutella (about 15 sec on the microwave on a microwave safe bowl)
Lets start creaming the butter with your KitchenAid Mixer flat beater then adding the vanilla extract, milk and adding 3 cups of powdered sugar and beat it for about 4 minutes till smooth, it will be nice and fluffy.
Add the last cup of powdered sugar into the frosting and beat it for another 2 minutes, in the mean time on a microwave safe bowl for 20 seconds goes the nutella to soften up.
Turn off yourt mixer and pour the softened nutella into the frosting and start folding it gently into the frosting.
Make sure your cupcakes are completely cold before you frost them.
And your cupcakes are now ready!
