This Lemon Lime Soda Cake Recipe is SUPER easy to make and its so tasty and refreshing. Kids are gonna love making this cake and seeing the soda foam the batter.
– 4 eggs
– 2 cups of sugar
– 2 cups of flour
– 1 cup of lemon/lime soda (I used diet)
– 1 tablespoon of baking powder
– lemon or lime zest
– 1/2 teaspoon of vanilla extract (optional)
HOW TO MAKE IT:
Preheat your oven to 350 F.
In your KitchenAid Mixer Bowl beat the egg whites with the help of the wire whisk attachment on high speed until nice and hard. Then without turning it off turn it to medium speed and add the yolks and sugar, then turn it to medium low and add vanilla extract and lemon/lime soda and you will notice the cream is going to foam all the way to the top at this moment then you start adding the flour slowly until all combined. Never turn off your mixer during this process.
Turn off your Mixer and add enough lemon or lime zest in the batter ( I added about 1 teaspoon ) and the baking powder and fold it gently until all combined.
Spray cooking spray on your favorite baking sheet and sprinkle flour all over to make sure your cake wont stick to it and pour the batter in.
To the oven it goes for about 40 minutes or until golden color.
You can take it off from the baking sheet when its still warn, I make sure I go all around with a knife to pull the cake away from the baking sheet before.
I topped this cake with a lemon lime glaze.
INGREDIENTS FOR THE GLAZE:
– Lemon or lime Zest
– 1 teaspoon of lemon or lime juice
– 1/2 cup of powdered sugar
– enough water
HOW TO MAKE IT:
On a small bowl add the powdered sugar, the lemon or lime juice, lemon or lime zest and add about 2 tablespoons of water and mix it until all combined.
If you like it thicker add less water if you like it more liquid add more water, if you think its too liquid or you like lots of it on your cake add more powdered sugar.
Pour it over your cake and It’s ready!
