Gluten Free Banana Walnut Muffin Recipe

This recipe is gluten free, and super easy to make using your KitchenAid Mixer.

Gluten Free Banana Walnut Muffin Recipe

INGREDIENTS:

– 1 egg

– 1/4 cup of milk

– 3 tablespoons of sugar

– 2 tablespoons of coconut oil

– 1 cup of white rice flour

– 2 teaspoons of baking powder

– 1/4 teaspoon of salt

– 3 ripe bananas (mashed)

– 1 teaspoon of vanilla extract

– 1/4 teaspoon of ground cinnamon

– 1/4 teaspoon of ground ginger

– 1/4 cup of chopped walnut

HOW TO MAKE IT:

Preheat your oven 350 F.

Add cupcake liner to baking sheet.

Inside the KitchenAid mixer bowl, add mashed bananas, coconut oil, eggs, vanilla extract, milk, sugar, salt, ground ginger and cinnamon. With the paddle attachment start the mixer on low speed until blended. Turn off the mixer and add rice flour and mix it until blended, you might need to scrape the sides and bottom of the bowl with a spatula. Turn off the mixer.

Add baking powder and with the spatula folding it by hand, gently, trying to not over mix it. Then fold in chopped walnuts and pour batter into cupcake liners.

Bake it for about 15 minutes.
