Fresh Spinach Lasagna Pasta Recipe

This delicious Fresh Lasagna Pasta Recipe is sooooo yummy, my advise is to make a ham and cheese Lasagna with white sauce using the spinach pasta. I will post the recipe in another link.

INGREDIENTS:

– 2 large eggs + 1 yolk

– 3 1/2 cups of all purpose flour (you might need more)

– 2 tablespoons of semolina flour

– 3/4 tablespoon of salt

– pinch of nutmeg

– 6 oz of frozen spinach, defrosted chopped very fine and squeezed dry (6 oz is a very full 3/4 cups of already defrosted and squeezed dry spinach)

HOW TO MAKE IT:

Add spinach, eggs, semolina and flour into your KitchenAid Mixer bowl and start on the lowest speed on your Mixer with the hook attachment on. You can start adding some water when you see everything is combined but the dough is dry (I added a total of 5 tablespoons of water because it was a VERY dry weather in California so It will depend) whenever it forms a ball take a piece of the dough and make a ball, if it stays in shape and doesn’t stick its ready. Make a big ball and wrap it with plastic wrap and let it rest for at least 30 minutes in room temperature.

After 30 minutes Its time to roll it, I used my pasta machine. Cut your ball into about 4-5 slices, take 1 piece and wrap the rest back (otherwise the pasta will dry).

Roll your dough with flour and pass it through the pasta roller on number 7 about 4 times always folding in half and sprinkling flour on each side everytime. Then pass it on number 6 (I found number 6 to be perfect thickness for my lasagna) about 4-5 times, cut the lasagna sheet into your prefered size, small square big one, whatever you like then sprinkle flour on each side and reserve (always cover the lasagna sheets with a clean kitchen towel so it wont dry up).

Do the same thing with each piece of the dough.

You lasagna is ready.

Now, I want to say you DO NOT have to boil this lasagna sheets before making the lasagna if you are going to use a lot of sauce, otherwise you can either let the lasagna sheets dry on a wire rack for at least 24 hours and boil it or you can boil it fresh on a big pot with boiling water, 1 tablespoon of oil and salt for 30 sec only then go ahead and build your lasagna.
