Focaccia Bread Recipe

This Focaccia Bread Recipe is so easy to make using your KitchenAid Mixer and you can use your creativity for any toppings you want on your focaccia bread. I like slicing mine and eating with a little bit of olive oil and Balsamic Vinegar, yummm.


-1  3/4 cups of warm water (around 110F)

– 1 package of dry yeast (7g) I used Rapid Rise

– 1 teaspoon of sugar (you will need another teaspoons to caramelize onions)

– 4 1/2 cups of all purpose flour (you might need a little more)

– 1 1/4 teaspoons of salt

– 2 tablespoons of olive oil (you will need more for pan and topping)

– 1 sweet onion or purple onion (sliced thin)

– dried rosemary

– olives

– Parmesan cheese

– coarse salt


On your KitchenAid Mixer bowl add the warm water, yeast and sugar, mix it to combine and let it rest for about 10 minutes until it foams.

With the hook attachment on start mixing this yeast foam on low speed and add the olive oil, salt and start adding the 4 1/2 cups of lour slowly.

Once its all combined, turn your mixer to medium speed for about 4 minutes. Check the dough to see if it is sticking to the bottom of the bowl, if it is, start adding a little bit more flour, this dough will be a little sticky.

Brush olive oil on a clean bowl, add the dough and cover with a clean kitchen towel, let it rise for about 1 hour. I let my dough rise in the sun and it was BEAUTIFUL.

You can shape the focaccia the way you prefer, but I used 2 round cake pans. Make sure you brush olive oil to the sides and bottom of your pan.

If you are going to use 2 pans, divide the dough in half, if you are only using 1, skip this step 😉

With your fingers spread the dough on your pan, cover with a clean kitchen towel and let it rise again for about 30-45 minutes.

Preheat your oven to 400F.

Lets caramelize the onions, on a fry pan add a little olive oil on medium heat and add onions, once onions start cooking add the sugar and let it caramelize, set aside.

This is the fun part, now your dough has risen, its time for the toppings, on my case I brushed a little olive oil over the top, made dimples over it and added the onions, rosemary, olives and sprinkled a little coarse salt over it and little Parmesan cheese.

To the oven it goes for about  35 mnutes or until golden brown. Dont over bake it otherwise it will be hard.
