Chocolate Zucchini Cake Recipe

This is a delicious, moist and fluffy Chocolate Zucchini Cake Recipe.

You can also tweak the recipe your way and use dark chocolate chips instead of milk chocolate or cocoa powder instead of chocolate powder.

INGREDIENTS:

– 2 cups of flour

– 1/2 cup (full) of chocolate powder

– 1 teaspoon of baking soda

– 1/2 teaspoon of baking powder

– 1/2 teaspoon of salt

– 1 cup of light brown sugar

– 1/2 cup (1 stick) of unsalted butter at room temperature

– 1 teaspoon of vanilla extract

– 1 teaspoon of instant coffee

– 3 eggs

– 2 cups of unpeeled grated zucchini (around 1 1/2 medium size zucchini)

– 1 cup of milk chocolate chips

HOW TO MAKE IT:

Pre heat your oven to 350F.

On a medium size bowl sift flour, chocolate powder, baking soda, baking powder and salt and whisk it until all combined and reserve.

On your KitchenAid Mixer bowl add the butter and with the help of the flat beater attachment cream the butter and add sugar and beat it until nice and fluffy (about 4 minutes). 

On a medium size bowl add grated zucchini, chocolate chips and a little bit of the flour mixture (enough to coat everything without putting too much) and reserve.

Back to the egg and sugar mixture add vanilla, coffee and eggs one by one always mixing it well after each addition.

Turn down your mixer to speed 2 and start adding the flour mixture until all combined.

Turn off your mixer and fold the zucchini mixture gently.

Grease a baking sheet and sprinkle either flour or chocolate powder (if you don’t like the white look of flour on your cake) and pour the batter.

Here is my advise, this cake gets easyly stuck to the bottom of the pan (which is no big deal because you can’t really see the bottom of the cake on a plate) so I would either grease the bottom and lay a piece of parchment paper before pouring the batter into the pan or make sure you grease bottom VERY well with butter.

Another tricky part is the baking time, I baked this cake for over 1 hour (maybe because I used a loaf bread pan which was deep) but usually should take between 40-50 minutes. After 40 minutes you can do the tooth pick test and if comes out wet keep baking it and checking every 5 minutes.

You can dust some powdered sugar or make a chocolate ganache. I left it as it is. Its a very moist cake and you cannot tell its made out of zucchini, Its a really great way to get your kids to eat their veggies 🙂
