I used a cheap manual machine for pasta that you can find even at Ross stores. You can try doing it by hand and a roller if you cant find it.
– 16 oz of semolina
– 16 oz of all purpose flour
– 6 eggs
– tablespoons of water as needed
HOW TO MAKE IT:
On your KitchenAid Mixer bowl add semolina, flour and eggs and start beating on low with the Flat beater attachment on for about 1 – 2 minutes, add tablespoons of water as needed, the pasta will be ready and have enough water whenever you hold it with your hands and it keeps its shape.
After its done wrap the pasta with plastic wrap for a few minutes.
Take 1 piece and you need to work on it with the help of the machine, I always start on number 6 about 6-7 times on the roller, folding the pasta sheet in half and passing through it again every time.
Then I roll it again on number 5 about 4 times always folding in half every time.
Now it’s time to shape it however you like it, at this point I chose Fettuccine and It was DELICIOUS…
Don’t forget to boil the water completely and add salt and a drip of oil in the water to cook this pasta. Since this pasta is fresh it will cook quickly for about 10 minutes and it’s done.
CHICKEN AND TOMATO SAUCE:
* I suggest you start this sauce even before you start the pasta, because it has to cook for over 1 hour.
INGREDIENTS FOR SAUCE:
– about 6 chicken thighs
– about 12 Roma tomatoes
– 4 garlic cloves
– 1/3 cup of red wine
– 1/2 cup of chicken broth
– 1 1/2 onion
– handful of basil
– salt and pepper to taste
– 1-2 tablespoons of sugar (depending in how acidic your sauce tastes like)
– olive oil
HOW TO MAKE IT:
Lets start browning the chicken, if your pot is not big enough you can use 2 pans to brown the chicken and after that you can use one big pot for the sauce. On medium high heat add about 3 tablespoons of oil on the pan until its hot and start browning your chicken, about 3 minutes on each side, reserve.
On your blender, add wine, chicken broth, garlic, onions, tomatoes, a little bit of the basil, little bit of salt and pepper and drizzle of olive oil. Puree everything together. I had to blend it in 2 parts since it did not fit my blender.
Now turn on your big pot on medium heat and add the chicken and the oil from fry pan you just used to brown the chicken and pour the tomato sauce over it, sprinkle a little bit of sugar and add oregano, marjoram and any other seasonings you prefer and let it cook in medium low heat for at least 1 hour scraping the bottom of the pan once in a while so it wont burn. After chicken is cooked you can taste the sauce and add more salt, pepper, sugar, whatever you feel like it needs. Add the rest of the basil and your sauce is ready!!!
The chicken will be so tender it will fall off the bone.
* if you like lots of meat on your pasta, you can make this sauce with more chicken thighs if you want.
