– 4 medium size apples
– 2 cups of sugar
– 4 eggs
– 1/2 cup of oil
– 2 cups of flour
– 2 tablespoons of baking powder
– ground cinnamon
– 1 teaspoon vanilla extract
HOW TO MAKE IT:
Preheat oven to 350 degrees.
First, lets start peeling and cutting the apples into small pieces, reserve the apples
Now, lets separate the yolks from the egg whites, reserve the yolks and beat the egg whites with the wire whipping tool for our KitchenAid Mixer till firm, reserve.
Now with the clean KitchenAid Mixer bowl and the flat beater tool, lets beat the egg yolks in speed 2 and start adding sugar, vanilla, and 1/2 teaspoon of ground cinnamon, after that add oil and after the batter is smooth add the apples and turn on speed 3.
After the batter gets moist (notice there is no liquids in this recipe because apples are full of water) and blended but still with chunks of apple turn your mixer to speed 2 again.
Lets start adding the flour little by little after its all combined turn off you mixer and bring the bowl closer to you.
Now lets add the whipped egg whites and start folding it into the batter very gently till the batter is smooth.
Last thing we need is to add the baking powder, and start mixing the batter very gently and slowly.
Spray cooking spray on a baking sheet and sprinkle flour so the cake wont stick to it.
Lay the batter into the baking sheet.
Now mix 2 tablespoons of sugar into a small bowl and 1 teaspoon of ground cinnamon, sprinkle this mixture over the batter.
Into the oven it goes at 350 degrees that should be preheated already.
My cake took around 30 min to be ready and I baked it in a glass baking sheet so It will depend, I started checking the batter with a tooth pick after 20 min.
Your cake is ready now, super moist and delicious.
